Encoder knob changes value on its own

The gain encoder has to be exchanged if it is acting like that.
You could also test all other encoders by slightly rotating them left and right without taking a step. The parameter must not change if you do that. If it changes, then the encoder may be outworn.

Clicks and Pops
  1. There is a large capacitor close to the main transformer. If that has a pattern printed on it, which looks like <>, then it needs to be replaced.
  2.  Is there a green battery on the top board? Check the green battery to see if it is leaking and eating traces on the circuit board.
In either case, please send the board to us for an overhaul.
Corresponding knob’s menu does not appear

Does the screen always stay on the same menu?

That can be caused by a knob that is too close to the faceplate or where there is dust between the rotary encoder shaft and the faceplate.

You may remove the knobs and clean the space between the shaft and the faceplate and put on the knobs again with a decent gap to the faceplate.
